Daydreamer 'Tay' Pinot Noir 2022

Hand-picked, hand-sorted, small batch ferment, French oak barrels; no detail is spared when crafting our Pinot Noir. True to the 2021 vintage, the wine portrays bold red fruit flavours paired perfectly with balanced spice from oak ageing.

Aromas of dark red fruits, cocoa nibs, bright florals, and subtle earth tones rise from the glass, creating a bold and expressive nose. The palate is full and rounded, showing impressive concentration and a balance of softness and structure. Layers of ripe fruit, floral complexity, and spice unfold gracefully, leading to a long, evolving finish that’s both powerful and elegant.

This is the first year we have made a stand alone Cabernet Franc but I think it was worth the wait!  This wine is deep and dark in colour and shows aromas of licorice, sage brush, flint, dark chocolate and black currants.  The palate is rich and mouthfilling with soft tannins and a wonderful balance between high toned black fruit and Cabernet Franc earthiness.

From 15-16 year-old vines, the Estate pinot noir shows the exuberant fruitiness of young(er) vines, with a combination of sappy red cherry and wild strawberry, alongside rose petal, beetroot and toast. If you have the discipline, tuck some of these away, because there's still the structure and concentration for this to gracefully age over the next 5-7 years. But, admittedly, it's hard to deny the pure, vivid fruit and perfumed aromatics now. Highly recommended – and remarkable value

Gravity reflects not only the gravity-flow design used to treat our grapes as gently as possible, but also the seriousness with which thwy make their wine. The wine shows the true potential of Pinot Noir in our vineyard and ultimately in the Niagara region.

A vintage, and a wine, like this do not come around very often. This is something special. True to the ripeness of the 2020 vintage, this wine pours darker and richer than Gravity's past. The nose of this youthful wine is concentrated red primary fruits; a complex medley of red and black cherry, raspberry, strawberry, and black currant all perfectly balanced with the spice notes from careful barrel ageing. On the palate, there is a distinct intensity of fruit - powerful yet finessed. The flavours match the aromas and lead to a long, lingering finish of sweet red fruit. The grippy tannins are ever present, showcasing the ageing potential of this wine, but a velvety texture develops with time in glass. Decant and drink now to appreciate the opulence of the 2020 Gravity.

From the region called 'Burgundy's long-lost cousin' - Prince Edward County - comes a beautifully aromatic and fleshy Pinot Noir that has all the charms of classic Pinot Noir!

A delicate nose showing cherries, florals and spices mixed with strawberry compote, earth and herbs. Bright red fruits and integrated earth tones carry over to the palate, followed by refreshing acid and solid tannic structure on an evolving finish.

The Wismer Parke Vineyard has long been the source of some of Ontario's most exciting Pinot Noirs. There's an immediacy about the Wismer Parke bottling that's hard to miss. Mouthfilling texture and a core of ripe red fruit make this instantly enjoyable, while the fragrance, structure and length suggest this is a Pinot that will continue to charm even after it sheds its luscious primary fruit notes

Our Wismer-Parke Pinot Noir shows the classic Vineland (as distinct from Jordan) combination of plush richness, tight minerality, and the wild, ‘bloody’ iron-grip of red soils. At once a hedonistic, ageable and yet perfumed Pinot Noir, Wismer-Parke’s vocation would seem to be one of a certain firm, wild prettiness, finishing with a long, ferrous-meets-chalk minerality. Planted just south of Highway 8 just uphill on the Bench, on a well-drained slope on the east side of Victoria Street in Vineland, the Wismer-Parke site is arguably one of Niagara’s ‘Grand Crus’ for Pinot Noir.
